Recipe: Chocolate Muffins

If you can’t tell from all the posts by Gita, I’ve been out sick — with the FLU (gasp). No fun, no fun at all. Now that I’m starting to feel like a regular person again, I decided to bake some comfort food. None other than nommy choco muffins. This version is super moist on account of the extra chocolate chips I put in (total fat kid, I know). Make some for yourself, and I dare you to only eat one.

  • 2 cups all purpose flour
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1 dark chocolate bar, crushed
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup greek yogurt
  • 1/2 cup almond milk
  • 1/3 cup grapeseed oil

Directions:
Preheat oven to 400.

In a large mixing bowl, whisk together: flour, sugar, cocoa powder, baking soda, and crushed dark chocolate bits until blended. Set aside.

In a medium mixing bowl, whisk together: egg, vanilla, yogurt, milk, and grapeseed oil until mixture is smooth.

Stir (beat) mixture into large bowl with dry ingredients until batter is just blended.

Scoop batter into muffin pan, filling each cup a little over halfway full.

Bake for about 15 mins or until toothpick inserted in the middle comes up clean.

Let muffins cool before removing from pan and enjoy — YUM!
