Recipe: Chocolate Muffins

If you can’t tell from all the posts by Gita, I’ve been out sick — with the FLU (gasp). No fun, no fun at all. Now that I’m starting to feel like a regular person again, I decided to bake some comfort food. None other than nommy choco muffins. This version is super moist on account of the extra chocolate chips I put in (total fat kid, I know). Make some for yourself, and I dare you to only eat one.

Ingredients
  1. 2 cups all purpose flour
  2. 1 cup sugar
  3. 1/2 cup cocoa powder
  4. 1 tsp baking soda
  5. 1 dark chocolate bar, crushed
  6. 1 egg
  7. 1 tsp vanilla extract
  8. 1 cup greek yogurt
  9. 1/2 cup almond milk
  10. 1/3 cup grapeseed oil
Instructions
  1. Preheat oven to 400.
  2. In a large mixing bowl, whisk together: flour, sugar, cocoa powder, baking soda, and crushed dark chocolate bits until blended. Set aside.
  3. In a medium mixing bowl, whisk together: egg, vanilla, yogurt, milk, and grapeseed oil until mixture is smooth.
  4. Stir (beat) mixture into large bowl with dry ingredients until batter is just blended.
  5. Scoop batter into muffin pan, filling each cup a little over halfway full.
  6. Bake for about 15 mins or until toothpick inserted in the middle comes up clean.
  7. Let muffins cool before removing from pan and enjoy — YUM!
