Recipe: Mini Kebab Sliders

Kebab is probably one of the most popular Persian dishes. You pretty much see it on the menu in every middle eastern restaurant served with rice and salad. We make this at our house a lot, especially during summer! To mix things up a little bit I decided make these babies into mini sliders. Fun for a summer party or dinner with lil man and husby.

What you need:

  • 1 1/2lb ground beef
  • 1 onion, minced
  • 1tsp salt
  • 1tsp pepper
  • 1tsp smoked paprika (or paprika)
  • 2tsp mint
  • 1tsp sumac
  • 1tsp saffron, infused with 1/3 cup hot water
  • 2tbsp grapeseed oil, to cook
  • 2tbsp butter, to cook
  • 2tbsp sumac, to garnish
  • 1 cup spinach, chopped
  • 1/2 cup beets, julian sliced
  • 1/2 cup cucumbers, julian sliced
  • Persian yogurt
  • mini wheat rolls

Directions:

Infuse saffron in 1/3 cup hot water and set aside.

In a large bowl, mix ground beef with onion, salt, pepper, smoked paprika and mint (I use my hands). Pour saffron and infused water over the top, mix until meat is coated. Shape into mini patties, place on dish, cover and refrigerate for at least an hour.

Heat grapeseed oil in a large grill pan. Grill kebabs for approx 3-5 mins on each side. For an extra nom, add some butter before turning.

Place mini kebab on top of bun. Top with yogurt, spinach, cucumbers, and beets. Now go FK on it!
