If you couldn’t already tell from the shoyu ramen recipe post, I LOVE me some ramen. This is a super simple (trust me it is REALLY easy) recipe for cold noodles that I make whenever I’m feeling lazy.

What you need for ramen:
- 1 package chuka soba noodles
- egg crepe, thinly sliced
- tomato, sliced
- cucumber, shredded
- lettuce, chopped
- mushroom, sliced
- bean sprouts
What you need for sauce:
- 6 tbsp shoyu
- 4 tbsp water
- 2 tbsp rice vinegar
- 1 tbsp lemon juice
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- 1 tbsp chili oil (or sriracha)
- 1 green onion stalk, chopped
Directions:
Prepare chuka soba noodles according to package instructions.
Add noodles to bowl, top with veggies, and sauce — ENJOY!
Yums! But it’s so cold here. I know there’s a heat wave in the US, but in Germany I need some warm hearty vegan food. Any recipes?
Use the same ingredients, but use the sauce to stir fry everything with the noodles.
