Recipe: Mini Donuts

My kiddo loves donuts — alright FINE I do too! Because of this, we started baking them on the reg. And the mini version is just to make me feel better about eating them (I don’t eat five at a time or anything).

Mini Donuts
For Donuts
  1. 1 cup all purpose flour
  2. 3/4 cup mochi flour
  3. 1/2 tsp baking powder
  4. 1/4 tsp salt
  5. 1/2 cup brown sugar
  6. 1 egg
  7. 2 tbsp butter (soften)
  8. 1 tsp vanilla
  9. 1/2 cup almond milk
For Glaze
  1. 1 1/4 cup confectioners’ sugar
  2. 1 tbsp cocoa powder
  3. 1 tsp vanilla
  4. 4 tbsp almond milk
  1. Preheat oven 325
  2. Lightly grease (or butter) donut pan
  3. In medium mixing bowl, mix flour, mochi flour, baking soda, and salt. Set aside
  4. In large mixing bowl, beat brown sugar, egg, and melted butter until mixture is smooth. Add in almond extract and half of the dry ingredients. Mix in the almond milk, followed by remaining dry ingredients. Stir (mix) until all ingredients are combined.
  5. Scoop mixture into a gallon plastic bag (or pipping bag, if you have one).
  6. Snip corner of plastic bag and pipe batter into mini donut pan.
  7. Bake for about 9 mins, should be light brown and ‘springy’ to touch.
For Choco-Vanilla Glaze
  1. Whisk sugar, cocoa powder, and vanilla extract in small bowl, add milk as necessary to ‘thicken’ the mixture.
  1. I use mochi flour because I like the ‘sticky’ texture it brings to baked goods. If you can’t find it, replace with all purpose flour.
